Shiga, embracing Lake Biwa, is a land where water, earth, and people weave a cycle of life. From the abundant blessings and the techniques refined on the foundation of Kyoto cuisine, "Omi Kaiseki" is created. Lake delicacies──Biwa trout with a pale and melting texture, Lake Biwa giant eel hiding powerful umami. Blessings of the fields, blessings of the mountains, and the harvest of the fields are low-chemical cultivated rice that the owner himself grows in Makino Town. Spring brings moroko and isaza, summer ayu and Biwa trout, autumn unagi, winter bear and duck. Interweaving the wisdom of Omi inheriting fermentation culture, we incorporate the transition of seasons into the dishes as "first," "peak," and "end." Stripping away unnecessary decorations, to a dish that pursues the exquisite balance of umami, aroma, and texture. The seasonal dish is prepared right in front of you by the chef. In a comfortable space of Japanese modern style with white wood as the base, with Omi tea, wine, and local sake nurtured by the rich water sources of the lake country, please slowly savor the poem of Shiga's gastronomy with all five senses.
